Sausage Cornbread Muffins

8 oz sausage patties
3/4 cup yellow cornmeal
1/3 cup flour
1 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
1 cup buttermilk
1 large egg
2 Tbs butter, melted
1 cup frozen corn kernals, thawed
3/4 cup shredded Pepperjack cheese

Preheat oven to 400. Line 12 muffin cups with liners. cook sausage and drain well. I suggest maybe using a maple sausage. Cool the sausage. Combine the cornmeal, flour, baking powder, baking soda and salt in one bowl. Combine the buttermilk, egg and melted butter in a separate bowl. Slowly combine the mixture until just blended. Fold in corn, cheese and sausage. Divide among muffin cups and bake 18-20 mins.

This needed something. Syrup, maybe. Or a vegetable of somekind. The muffins were very dry... maybe I should have just added a stick of butter and called it a Paula Deen recipe.
