4 chicken cutlets
salt and pepper
2 cloves garlic, minced
1 tsp dry basil
8 thin slices of ham
4 slices provalone cheese
8 slices bacon
Preheat the oven to 375. Place each cutlet on a piece of aluminum foil about 5x6 inches. Sprinkle each cutlet with salt, pepper and garlic. (I bypassed that and used garlic salt).
Layer a slice of cheese and 2 slices of ham on each cutlet. Starting at the narrowest end, roll up the cutlet tightly. Gently wrap 2 slices of bacon around each cutlet. Fold up the aluminum foil around each roll tightly.
Place in a baking dish and bake for 25 minutes. Remove from the oven and gently open up the foil wrappings to expose the bacon. Increase the oven temp to 400 and cook for an additional 10 to 15 minutes until lightly browned. I suggest putting the rolls on a rack when they've cooked for about 25 mins because the bacon on the bottom of the roll was not as done as it could have been.
I served it with the warm potato salad I've made in the past. It was very good.
