This is the same soup they serve at Olive Garden. I LOVE it.
1 lb hot Italian Sausage
1 1/2 tsp crushed red pepper flakes
1 large diced white onion
4 Tbs bacon pieces (I always use more. a lot more.)
2 tsp garlic puree
10 cups water
5 boullion cubes
(or 10 cups of chicken stock)
1 cup heavy cream
1 lb sliced potatoes
1/4 of a bunch of kale or spinach
Saute sausage and red pepper flakes in a large stock pot. Drain excess fat and refrigerate while you prepare the other ingredients.
In the same pan, saute the bacon, onion and garlic for approximately 15 minutes, or until the onions are soft.
Mix together chicken boullion and water and then add it to the onion mixture. Cook until boiling.
Add the potatoes and cook until soft. About 1/2 hour.
Add heavy cream and cook until heated. Stir the sausage back in and then add the kale or spinach just before serving.
