12 pineapple rings
1/4 cup brown sugar
3 Tsp hot water
1/2 cup sweetened shredded coconut
Preheat the oven to 375. Coat a baking sheet with cooking spray.
Arrange the pineapple slices on the sheet. In a small bowl, whisk together the water and brown sugar until the sugar dissolves. Brush the mixture on top of the rings and then sprinkle the coconut over the top. Bake until the coconut is golden brown and the pineapple is tender. About 10-15 minutes.
