Stove top Jambalaya

Fandom - ST - CP - big smile baby
1 cup cooked rice (2 cups chicken broth and 1 cup rice)
2 tsp olive oil
1 large green bell pepper
1 large onion
2 cloves garlic
1/2 lb chicken
1 tsp Cajun seasoning
1 tsp dried oregano
2 tsp jalepeno seasoning (or to taste)
1/2 lb chorizo sausage
1/2 lb medium shrimp
28 oz can diced tomatoes
2 bay leaves (I used fresh)
1/4 cup chopped fresh parsley
Salt and Pepper

Cook the rice according to the package directions.

Heat the oil and add onion, green pepper and garlic. Cook, stirring until softened, about 3 minutes. Add the chicken and brown, about 5 minutes. If the chorizo you bought is raw, you should brown it in a different pan right now with a little olive oil. If it was already cooked, just add it and the shrimp along with the seasonings. Stir for a couple of minutes until everything is cooked through.

Add the tomatoes and bay leaves. Bring to a simmer and let simmer until the chicken and shrimp are cooked through. Mix with the rice and serve
