Edie's Pasta Salad

1 lb fun shaped pasta (I usually use rotini, but this time I used something called radiatore)
1 red pepper
1 green pepper
1 bunch of celery
1 jar zesty dill pickles
1 can chick peas (garbanzo beans)
1 small can sliced olives
1 lb chicken
1 jar capers
1/2-3/4 cup mayo
2 cups shredded cheddar cheese
2-3 Tbs freshly chopped thyme
salt and pepper to taste

Cook the pasta in a large pot of salted water

chop up all the vegetables and put them in a large bowl. Season the chicken with salt and pepper and the thyme. Saute the chicken in a small pan until brown on both sides. Let the chicken rest for a few minutes and drain the vegetables and add them to the bowl. Drain the pickles VERY well and chop those into tiny pieces and add those to everything else. Cut the chicken and add that, then combine everything in the large bowl. Season with salt and pepper and then add the mayo. Stir to coat everything. Sprinkle the cheese on top and then serve.
